Mix together:

Why baker's percentages?

In baker's math, flour is always 100%. Everything else — water, salt, levain — is a percentage of the flour weight. A 75% hydration loaf at 500g flour has 375g water. Same ratios at 1kg flour: 750g water. Same dough, twice the bread.
